Ximena Jimenez
Ximena works in the food and beverage sector as the CEO and Founder of Chujuk Enjambre. For health-conscious and socially responsible individuals between the ages of twenty-eight and sixty-five, Chujuk Enjambre offers a range of honey products and focuses on enhancing the quality and variety of honey produced by Yucatecan beekeepers. This opportunity benefits the beekeepers and contributes to the reduction of obesity and overweight in Mexico. Additionally, as bees have declined worldwide, Chujuk Enjambre promotes sustainable beekeeping practices through training programs on good manufacturing practices, thus benefiting crops and food. Ximena’s short-term goal is to enhance the brand and reputation of the company in Mexico to attract and retain customers while building trust in the market. Additionally, they plan to expand the company's reach by exploring new markets and gaining market traction in Mexico. Ultimately, the fellow aims to improve the economic and social growth of the Mayan communities in Yucatan. This will be done by ensuring equitable working conditions and providing adequate income to the communities. Coming into the YLAI Fellowship, Ximena’s top business challenge is Scaling and Expansion. More specifically, they want to obtain funding to expand the company and increase its market presence. During the Fellowship Placement, Ximena hopes to network with relevant actors in the entrepreneurial ecosystem. They would like to have a placement in a startup accelerator, high-impact entrepreneurship, or business center. Ximena would also like to learn more about economic and agricultural development, financial analysis, foreign trade, social economics, organizational structure of rural communities, Inclusion of women in the economy, and marketing.
