Trudy Natoya Lucy Popo Leonce
As a Founder and Managing director for Exotic cuisine, Trudy Popo-Leonce has used her dynamic instincts for bold and exotic flavors and her experience in blending ingredients while conducting extensive research on chronic diseases. During the fellowship, Trudy aims to learn how to become a more effective entrepreneur, gain a better understanding of efficient manufacturing, and improve her business acumen. Upon returning to Saint Lucia, Trudy plans to shift the mindset around healthy eating, counter the misconception that it has to be tasteless or overly expensive, and educate others as she provides healthier eating options and ideas from a national platform. In addition, she seeks to impact the lives of young aspiring entrepreneurs through trainings and workshops. She plans to create a nonprofit organization where 10% of weekly sales will help children who are less fortunate (especially those with chronic diseases) to get an education and receive daily meals. To ensure this long term goal is achieved, Trudy will continue to network with her YLAI fellows to gain further expertise and to extend her reach both regionally and globally.
